OFPL will celebrate Day of the Mushroom by providing a cooking demonstration. Join us on Friday, April 16th at 1:00 p.m. on Facebook @galluplibrary or YouTube at Octavia Fellin Public Library to learn how to cook a vegetarian-style mushroom rice recipe that is not only delicious but can be made for the entire family.

Vegetarian Mushroom Rice
INGREDIENTS: • 2 teaspoons butter • 6 mushrooms, coarsely chopped • 1 clove garlic, minced • 1 green onion, finely chopped • 2 cups vegetable broth • 1 cup uncooked white rice • ½ teaspoon chopped • fresh parsley • salt and pepper to taste
INSTRUCTIONS: 1. Melt butter in a saucepan over medium heat. 2. Cook mushrooms, garlic and green onion until mushrooms are cooked and liquid has evaporated. 3. Stir in vegetable broth and uncooked rice. 4. Reduce heat, cover and simmer for 20 minutes. 5. Season with parsley, salt and pepper.

Lime Rickey
Ingedients: • 1 oz. Lime Juice • 1 oz. Sugar Syrup • 4 oz. Soda Water • 1 Lime
Directions: 1. Take the limes and squeeze them into a glass. 2. Pour in the sugar syrup 3. Top the glass with a shaker and shake the contents thoroughly. 4. Take a tall glass, add ice. 5. Pour the shaken contents through a strainer and into the glass. 6. Add the soda water. 7. Stir. 8. Garnish with lime peel 9. Drink and enjoy!

Ingedients:
• 1.5 oz. Grenadine • 6 oz. Ginger Ale • 1 Lemon
Directions: 1. Pour grenadine into tall glass. 2. Add ice. 3. Pour in ginger ale. 4. Stir. 5. Garnish with lemon peel.

Mojito
Ingedients: • 1.5 oz. White Rum • 0.75 oz. Lime Juice • 0.5 oz. Sugar Syrup • 4 oz. Soda Water • 1-2 Sprigs Mint Leaves • Lime Slices, Garnish
Directions: 1. Muddle mint leaves with simple syrup in mixing glass or tin. 2. Add lime juice, lime hull, and rum. 3. Add to milkshake glass. 4. Top with ice and soda water. 5. Roll drink back and forth in mixing glass. 6. Top with ice and garnish with mint bouquet and lime slice. 7. Drink responsibly & enjoy!

Directions: 1. Add Ice 2. Pour vodka into the glass. 3. Pour in ginger ale. 4. Add Grenadine. 5. Garnish with lemon peel. 6. Drink responsibly & enjoy!

All month long, there will be a display where you can vote on Red, Green, or Christmas as the best way to have chile served. In addition, please share your favorite chile recipes on our community board.
